A natural emulsifying gel used in both ice cream and pastry. Maintains the velvety, creamy aspect of gelato, ice cream or sorbets by evenly distributing the fat in the mixture. Dosage per gelato/sorbet 3-8g per liter of mix.
A blend of vegetable fibers designed to improve the structure of gelato and sorbet without changing the sweetening values. Product will be more stable in the display case, richer in solids, and warmer on the palate. Lactose free and gluten free.
